Why Ghee is Good for You
Ghee is a class of clarified butter that originated in ancient India. Ghee is produced by melting butter and allowing the components to separate by density. The water evaporates and some solids float to the surface. These floating solids are skimmed off and the remainder of the milk solids sink to the bottom. Now on the top is butterfat. This butterfat is separated with a separatory funnel or a gravy fat separator. This butterfat is the clarified butter or ghee.
